Mango Cheesecake Slice

Mangoes are so, so delicious. I could eat them forever. I’d probably get a rash, but it wouldn’t stop me. This Mango Cheesecake Slice from The Colourful Housewife doesn’t take long to put together, but make sure you allow for 6 hours in the fridge when planning ahead. Yum yum yum in my tum tum tum! Ingredients:

500g mango diced
500 g cream cheese
1/2 cup sugar to taste
1/4 cup water
1 tbs gelatine powder
300 mls cream
1/2 cup sweet plain biscuits
75 g butter

Method:

Blend biscuits in the food processor and add the melted butter.
Combine mixture and then press into the bottom of a slice tin.
Place tin in freezer while preparing the rest of the mixture.
Combine half of the mango with the cream cheese and sugar in a food processor and process until smooth.
Add the gelatine to the water and warm in a microwave for about 20 seconds.
Stir the gelatine until fully dissolved and allow to cool.
Add cream to the blended mango mixture and blend for about 40 seconds.
To this mixture add the cooled gelatine and blend for a few more seconds.
Gently fold remaining mango into cheesecake mixture.
Pour the mixture into the prepared tin.
Refrigerate for at least 6 hours, decorate with slices of mango.

Of course the last step is to show it off to all your friends and act like it’s no big deal that you’re a magician in the kitchen.

I mean, you've gotta check it tastes okay right? 🙂 Picnic Bar Slice Ingredients: 1 Cup of mixed unsalted nuts 1 Block cooking chocolate, we use Cadbury 1/2 Tin of caramel (can purchase in the baking isle of your supermarket) 1 Packet of cream wafer biscuits 1 Picnic bar Method: Place the packet of wafer biscuits in a blender and blitz Add wafers to a bowl with the caramel and nuts Microwave chocolate for 1 minute on high Add 1/2 the chocolate to the mix and stir through Line a tin with baking paper ( we used a rectangle tin) Add mixture and press firmly into the tin. Peppermint Fudge Slice 1 Tin of condensed milk 1 Block of white cooking chocolate 1 Packet of Marie biscuits 1 Peppermint Crisp bar 1 Block of peppermint chocolate, we use Cadbury 2 Drops of green food colouring Method: Place the peppermint chocolate and condensed milk in a microwave bowl and cook on high for one minute. Blitz the packet of biscuits in a Thermomix or blender. the finer you blen the more fudge like it will be if you like a more crunchy base not blend as much. Add the condensed milk mixture to the biscuit crumbs and stir through well. Pour mixture into a lined baking tray and spread evenly. In another microwave bowl melt the white chocolate for one minute, once cooked add a few drops of green food colour and mix through.
