Hands up if you have kids that can cater for them selves in the kitchen. It’s so rewarding when they are interested and capable, but god damn they make a hell of a mess don’t they?

Here is one of our favourite after school snacks. You could add finely diced red onion and some chopped up bocconcini or avocado if you like, but we don’t always have those things on hand and it adds to the cost.

What you will need:

Some type of bread to toast x 2

A medium tomato

4 x basil leaves

Table spoon olive oil

2 x teaspoon balsamic vinegar

1 x clove of garlic

salt and pepper to taste

Method:

Dice your tomato and pop it in a bowl

Shred your basil and add it to the tomato

Throw in the olive oil, balsamic, salt and pepper

Give it a good mix

Toast your bread

Rub toast with peeled garlic clove

Taste test the tomato mix, add a sprinkle of sugar if you like

Spoon it on to your two pieces of toast and YUMMO! Healthy after school snack.
